Wait, what? Roots for breakfast?

If it seems awkward to you to have taro, yam, sweet potato or potatoes substituting bread, come with me for a minute: 
- Unlike bread, root vegetables (or even a piece of pumpkin) cannot be hard to prepare. We either put them in a pan along with cold water and take to simmer until tender; or roast in the oven, medium temperature, in a parchment paper covered tray until tender. In 1 hour you get your morning carbo ready (of course, I do this in advance, and generally prepare enough for the work week).
- It’s gluten-free, dairy-free, soy-free, vegan, chemical-additives-free…
- It’s unrefined and unprocessed.
- It’s tasty.

What else could I ask for?
